Delicious Salmon Made Simple

A delicious salmon lox sandwich can be enjoyed anytime and anywhere. Salmon lox is both simple and delicious. Make this sandwich camping or at home, or it can be prepared ahead of time and brought with you. The salmon and cream cheese probably should have refrigeration. For this reason, I don’t recommend putting it in your backpack for lunch, but it should be fine in a cooler, or you could bring it to the office.

Summertime Salmon Lox Sandwich

The inspiration for the sandwich came from a contest entry I did for a bread company. One of the entry categories was for local state recipes. Because salmon is a traditionally northwest dish, I decided to use it as my main ingredient. Since this was a sandwich I decided upon salmon lox as my main ingredient. I thought about a hot sandwich, but due to the summertime heat, I thought a cold sandwich seemed the way to go. As a result, the recipe calls for it untoasted to make it a cool and refreshing summer sandwich.

Bread Is The Key

Bread can make a sandwich taste good or bad. As I was thinking about which bread to use, sourdough and potato bread came to mind. Bagels seemed like an obvious bread choice but I wanted this sandwich to be different. The bread aisle of the supermarket had several options. I found a loaf of Hawaiin sweet bread which seemed like a great choice. The sweetness from the bread mixed with the saltiness from the salmon seemed like an amazing combination. If you try this I think you will agree, the sweet bread works really well. I want to try a variation of this recipe on Hawaiin sweet rolls for my next football gathering. The salmon lox sandwich is a healthy alternative to greasy hamburger sliders and a unique twist on a classic.

This is a twist on a traditional bagel and lox. This sandwich uses sweet Hawaiin bread to bring out the savory flavor of the salmon. This is on delicious salmon lox sandwich.

Ingredients

  • 2 slices Oroweat® country Hawaiian Sweet bread
  • 2 oz salmon lox
  • 4 tbsp whipped cream cheese
  • 1 tsp capers
  • 1 small red onion, thinly sliced
  • 2 thin tomato slices
  • 1 c raw baby spinach

Instructions

  1. Take two pieces of Oroweat® country Hawaiin Sweet bread and spread 2 ounces of whipped cream cheese on each side.

  2. Place the capers on one piece of the bread.

  3. Add a couple of slices of onion to the top of the capers.

  4. Place two or three tomato slices on top of the onions.

  5. Add about a cup of raw baby spinach to the top of the tomato slices.

  6. Add the salmon lox to the top and place second piece of bread on top. Serve imediately.
