I first had a bacon egg cups one morning at work. I was working in downtown Seattle where there were many restaurants for any craving. One morning as I arrived at work I noted that I had not had breakfast and that I was very hungry. So before hopping up to the 18th floor, I decided to run across the street and grab a quick bite. The food that caught my eye that morning was the cup-shaped egg and bacon “thingies” with a touch of pesto in them. The bacon and egg cups were so flavorful with both the bacon and pesto adding plenty of depth and the egg was yummy and cooked just right. I knew I needed to recreate this food, I was in love!

With Paleo diets all the rage these days, this is a perfect breakfast for those eating a paleo diet. While I do not partake in the Paleo diet, I have heard that you do not eat cheese with this diet. So if you wanted to make this truly paleo, remove the parmesan cheese from the ingredients.

How To Make Bacon And Egg Cups

You will need a Dutch oven if you plan to do this over a fire. If you do this inside or out you will need one or two muffin pans that hold about 6 muffins. One muffin pan will hold the bacon and the other muffin pan will be set on top to hold the bacon in place as it cooks in the correct shape. You can also try using paper muffin liners. The liners do not work quite as well since they are so light so stacking the pans is the preferred method. But wait, there is more than one way to cook the bacon.

How To Cook Bacon For Bacon And Egg Cups In A Muffin Tin

The easiest way to cook bacon and egg cups is with a muffin tin. The biggest issue you will have is par-cook the bacon so that it comes out done. My above method of cooking them in the muffin tin worked, but since then I have discovered that you can just fry the bacon for 8 to 10 minutes and then put them in the muffin tin. Just make sure you do not make crispy bacon or you will not be able to shape it in the tin. The bacon needs to stay pliable. Par cooking the bacon in the muffin tin was greasy so frying the bacon in a skillet first may be a little less greasy and easier in the long run. I will definitely try it this way next time I make these.

The Sausage Option

While I have tried this with breakfast sausage, I think that bacon works best. Ground breakfast sausage conforms to the shape of the muffin pan. When the sausage is shaped into a bowl, precook it in the oven. Then crack an egg in the middle and top with some pesto and continue cooking till the egg is done. While this method is good, it is very heavy with sausage and was difficult to mold the sausage thin enough.

Ingredients

  • 8 strips bacon
  • 6 large eggs
  • 1 jar pesto
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp parmesan

Instructions

  1. Line each of the holes of the muffin pan with one piece of bacon, circling it around the wall of each muffin hole.

  2. Cut remaining bacon strips into 1 or 2 inch pieces and place on the bottom of each hole.

  3. Take a second muffin pan and place it on top of the first, so that the bacon is nudged in securely and will not fall over when cooking.

  4. Place in an oven or Dutch oven or regular oven at 400 to 425 degrees and bake for 20 to 30 minutes or until the bacon is cooked.

  5. Once the bacon has cooked remove it from the oven.

  6. Crack one egg into each muffin hole with the bacon in it.

  7. Place a half a teaspoon of pesto sauce on each egg. It may sink slightly but that's ok.

  8. Cook at 400 degrees or until the egg is cooked.

  9. Let cool for a few minutes before serving, the bacon will be hot so be careful.

  10. Top with a little parmesan cheese.
