For this, you might consider a muffin pan or anything that will keep the avocado level while it bakes. Also, if you like your eggs runny 15 to 20 minutes may be enough time but if you like your eggs well done you may want to cook this longer. However, the longer this cooks, the more the avocado degrades and changes the consistency of it. I prefer the avocado egg breakfast less cooked, but you decide.

Avocados are very healthy and make a great fat substitute. So enjoy that avocado, in moderation of course.

Prepping For Breakfast

Be sure to crack your eggs in a separate container before adding them to the avocado. This does two things. First, as a wise old chef once told me, by cracking eggs in a smaller, separate container, you can discover a bad egg before it degrades the whole batch. Second, by adding your yolk to the avocado first, you can then add only as much egg white as the whole from the seed will carry. Otherwise, you might be cracking your egg into an avocado and have half of it spilling over the sides of the avocado. Not a pretty site, trust me, I have done it.

Avocado Egg Breakfast Outdoors

If you plan on doing this avocado breakfast recipe outside, you will want a Dutch oven to bake it in. You will also want to make sure that whatever you use to prop up the avocado’s fits in your Dutch oven. Sprinkle some Parmesan cheese on top and serve with some pesto sauce or just salt and pepper. I really enjoyed this with just some Parmesan cheese and a sprinkle of salt and pepper to taste. The avocado egg breakfast is both delicious and fun to make. You have to try this!

Ingredients

  • 1 whole avocado
  • 1 medium eggs
  • 1 dash parmesan cheese
  • 1 dash salt
  • 1 dash cayenne pepper

Instructions

  1. Cut avocado in half and remove the pit.

  2. Crack eggs into a bowl. Add egg yolk to each avocado half. Then place egg white into each avocado until full. Do not over fill.

  3. Once the avocado half is full of egg yolk and whites, sprinkle with salt, pepper, and cheese.

  4. Bake at 425° F. for 15 to 20 minutes or until the egg is cooked. If using a Dutch oven, make sure you can prop up the avocado. See the Dutch oven cooking chart for proper amount of coals.
